Minced meat gravy. Minced meat sauce in tomato Minced meat fried with onions and tomato paste

Hi all! Today we have very tasty, juicy minced meat with tomatoes.

This is an amazing summer combination - a little spicy, moderately sweet - it makes you want to eat more and more... But you have to show the will not to overeat :)

It is prepared quickly and simply - all stages of preparation will take you less than an hour, and the active cooking time is about half an hour. Try it and your whole family will definitely love it!

Ingredients:

So, a step-by-step recipe for minced meat with tomatoes:

  • Making a fry
  • A little spicy
  • Simmer in tomato sauce
  • Serve with side dish

Let's start with the onion: cut it into medium-sized cubes and send it to a heated frying pan to fry until golden brown.

2

When the onion begins to turn golden, add the minced meat to it, carefully breaking up the lumps with a wooden spatula. During the frying process they will form again, so periodically stir and break them again.

It is best to take homemade minced pork and beef one to one - it turns out juicier and more tender. But if you wish, you can take a different proportion or one type of meat.

3

Fry the minced meat for 3-5 minutes over medium heat and at the same time grate the carrots on a medium grater. Cut the pepper (you can take any color, but preferably not green) into small cubes.

Add carrots and peppers to the minced meat with onions, mix and fry until golden brown.

4

Cut the tomatoes into cubes and place them in a frying pan when the carrots become soft and change color. Stir and fry for five minutes.

If you are not cooking in the summer, you can replace the tomatoes with a tomato salad for the winter or with frozen tomatoes - it will also be very tasty.

It’s just better not to substitute tomato paste, because it is already present in the recipe. If you only have tomato paste and no tomatoes, I recommend making spaghetti bolognese.
5

Pass the garlic through a garlic press or three on the finest grater and add it to the vegetables with minced meat. Salt a little and add spices.

You can change the set of spices to your taste, I recommend you try this particular combination - a little hot pepper and dried herbs, half a teaspoon of ground black pepper and the same amount of paprika. A pinch of coriander - and the aroma makes your mouth water :)

6

Now the final touch: tomato paste or ketchup. I use sweet and sour ketchup and don't add anything to it. If you use hot ketchup or tomato paste, add a teaspoon of sugar.

7

Pour just a little boiling water (or boiled hot water) - up to about half the level of the minced meat. The water should not completely cover the minced meat, otherwise it will take a very long time to simmer.

Cover the frying pan with a lid and leave to simmer for 5-7 minutes over medium heat or slightly lower than medium.

8

Watch how the liquid is boiled down, the meat is soaked in broth with spices and vegetable juice - and it becomes surprisingly tasty!

And as for pasta and minced meat, these ingredients can probably be found at anyone’s home.

At the same time, you can complement the dish with almost anything, giving the classic recipe a special flavor.

Various vegetables, cheese, herbs, cream or sour cream, and spices can be added to spaghetti with minced meat and tomato paste. Minced meat can be used from beef, pork, poultry or mixed.

Spaghetti with minced meat and tomato sauce is a dish that allows for considerable creative freedom. But there are some principles that are better to adhere to.

Firstly, it is better to prefer durum wheat pasta. Of course, they are more expensive, but they are much more useful. In addition, they are not so capricious in preparation: they do not stick together, keep their shape, and look more appetizing. Of course, you can boil any pasta into porridge, but cheap and low-quality ones boil without outside help.

Secondly, it is better to undercook spaghetti slightly than to overcook it. They will cook in the sauce, becoming more aromatic and tastier, imbued with the taste of minced meat and tomato.

Thirdly, pasta for spaghetti with minced meat should be cooked over low heat, stirring several times, otherwise it may become sticky and “clumpy”.

Fourthly, tomato paste can be supplemented with any additives that are especially loved in the family, and Make your own tomato sauce. To do this, you need to remove the skins from the fruits (dipping them into boiling water and then immediately into cold water), grind them in a blender and boil them by about half. However, if spaghetti with minced meat and tomato paste requires a sauce based on tomato paste, then there is no point in boiling it down so much: you will still have to dilute it later.

It’s also better, of course, to make minced meat yourself rather than buy it in a store. Then, at least, you can be sure that it is made from quality products, without “horns and hooves,” and that the minced meat is fresh. To prepare spaghetti with minced meat, it is better to pass the meat through a coarse mesh grill - the dish will be juicier.

If cream is required to prepare the sauce, then it is better to take those with a fat content of 20%. It is advisable to use hard or semi-hard and quite fatty cheese for spaghetti with minced meat and tomato paste. In addition to classic Parmesan, you can take Maasdam, cheddar, etc.

Recipe 7. Spaghetti with minced meat and Bolognese sauce

Ingredients

Spaghetti – 400 g

Minced meat (mixed pork and beef) – 400 g

Onion – 1 piece

Carrot – 1 piece

Dry white wine – 1 glass

Tomatoes in their own juice – 1 half-kilogram jar

Salt, a mixture of Italian herbs

Vegetable (better, of course, olive) oil

Cooking method

Fry the minced meat, kneading the lumps, pour the wine into it and leave on low heat until it evaporates.

Grate the carrots, chop the onion, add them to the minced meat and continue to simmer for another 15 minutes. Add salt and sprinkle with herbs.

Remove the tomatoes from the jar and chop finely with a knife (a blender will be too fine). Lay them out and pour the tomato from the jar into a saucepan, cook for another 40 minutes over low heat.

Boil the spaghetti until al dente. Keep in water for another 2 minutes, drain in a colander. Place on plates and top with Bolognese sauce.

To prevent the spaghetti from sticking together, it is recommended to add one spoon of olive oil to the water. However, note that olive oil will add flavor to the spaghetti.

When cooking spaghetti, you need to stir it several times: when you place it in boiling water, when the water boils again, 2-3 times during the rest of the cooking time.

To cook spaghetti al dente, it will take about 7 minutes of cooking and 2 minutes in hot water. But it’s better to look at the packaging more precisely.

You can add smoked meats minced through a meat grinder or chopped with a knife to the minced meat.

Unnecessarily, it is better not to mix spaghetti with sauce, but to put the sauce on top of the pasta, so they will look more aesthetically pleasing.
