  • Broccoli is a type of cabbage whose large green inflorescence, consisting of unopened buds pressed tightly together, is eaten. The main highlight of broccoli, many nutritionists call its extremely high protein content, which, calculated per 100 g of net weight, is even greater than that of beef. This allows experts to safely call it an indispensable product in dietary and vegetarian nutrition.

In addition to protein, cabbage contains a lot of vitamins A, C and K, and microelements such as potassium, magnesium, phosphorus, and iron. Vitamins are broken down by intense heat treatment, so broccoli is most often steamed or in water, or baked.

Broccoli casseroles are delicious and tender dishes that retain all the benefits of this unusual cabbage. This delicious vegetable goes well with all types of seafood, meat and mushrooms, which is why casserole recipes contain a wide variety of ingredients to suit every taste.

Below are several simple and affordable broccoli recipes.

    Minutka Broccoli Casserole

The easiest version of green cabbage casserole.

    List of ingredients:

    • Fresh broccoli – 1 kg.
    • Cheese – 200 g.
    • Wheat flour – 1 tbsp. l.
    • Milk – 250 ml.
    • Salt.
    • Mix of spices for vegetables.
    • Black pepper.
    • Vegetable oil – 30 ml.

    Cooking method:

    1. Lightly heat the vegetable oil and fry small pieces of broccoli in it. When using a frozen product, you need to fry until completely cooked, but without allowing the pieces to completely soften.
    2. Once the vegetables are browned, set the pan aside.
    3. Finely grate the cheese. In a blender, beat milk, grated cheese, spices and wheat flour.
    4. Pour this thick mixture over the cooled broccoli and place the pan in the oven to bake for 15-20 minutes at 200 degrees. The mixture should cover the pieces of cabbage, but not fill the entire space completely.

    Vegetarian Broccoli and Potato Casserole

A very tasty combination of crumbly potatoes and tender broccoli florets. Cooking times for vegetables vary greatly. • Broccoli – 500 g.

We cook “green” cabbage with chicken, with the addition of cheese, and cauliflower in the oven and slow cooker. Step-by-step recipes and recommendations.

    About the benefits of broccoli

This green vegetable is a bottomless storehouse of vitamins, minerals and trace elements. It contains a large amount of vitamins C, A (retinol), K, PP, calcium, sodium, phosphorus, iron, potassium, a number of mineral salts and vegetable protein. The product prevents the development or appearance of peptic ulcers and reduces the risk of developing cancer cells. Those who regularly consume broccoli significantly reduce the risk of cardiovascular diseases and nervous system disorders.

In addition to its composition, cabbage pleases everyone who is losing weight with its low calorie content. Only 28 kcal per 100 grams. Therefore, the vegetable is suitable for dietary nutrition. In addition, there are many cooking options. The most popular: broccoli casserole, cream soup, salads, cutlets, other snacks or side dishes.

How to choose and cook correctly

When buying a vegetable, pay attention to its color. It should be green. If the inflorescences are yellowish, with a brown or purple tint, it means it is stale. Also, there should be no flowers on the head of cabbage. When a vegetable bends like rubber and has a bluish tint, this means that it has been lying around for a long time and is unsuitable for consumption.

    Cooking rules

    • Heat treatment time. All the beneficial properties of “green” cabbage are preserved if you cook it for no more than 4-5 minutes.
    • Type of preparation. Broccoli can be eaten fresh by washing thoroughly under running water. Steaming takes about 7-10 minutes and is the healthiest option. Broccoli casserole in the oven or in a frying pan is prepared after first boiling the cabbage in salted water.
    • Frozen product. Broccoli from the freezer does not need to be defrosted. The required amount of vegetable should be thrown into boiling water and boiled for 10-12 minutes.
    • For children. For baby puree, broccoli needs to be cooked longer - 15-20 minutes, so that the food is not heavy for the fragile digestive system and does not cause increased gas formation.
    • Stems and inflorescences. If you use the whole cabbage for cooking, then the stems should be cooked first, and after 5-6 minutes, put the disassembled inflorescences into boiling water and boil for another 3-4 minutes.
