I wanted to try something new and unusual.

So I decided to fry them into cutlets. But not lean ones, but more filling and high-calorie ones, with chicken, hard cheese and herbs. Of course, I knew in advance that it would turn out delicious. But the result exceeded all my expectations. Now I will definitely cook them often. At least until the vegetable season ends.


Ingredients:

chicken breast 700 g

small young zucchini 2 pcs.

hard cheese 100 g

chicken eggs 2 pcs.

garlic 1 large clove

small bunch of green onions

parsley 5 sprigs

    Step 1: Making the mince

    Wash and dry the chicken breast. Separate the fillet from the bones and clean it of membranes. Cut the meat into medium-sized pieces to make it easier to grind into minced meat. Place the chicken pieces into a blender bowl. Peel the garlic clove, wash it and cut it into thin slices. Add garlic to the meat and grind the mixture into homogeneous mince.

    You can also use a meat grinder with a fine grid to grind the ingredients. Transfer the prepared minced chicken with garlic into a deep bowl.

    Step 2: Add vegetables, cheese and herbs

    For this recipe, I recommend using young vegetables with thin skin and small seeds. Wash the zucchini and trim the tails. Grate the vegetables on a coarse grater. Then squeeze them out of the juice so that the minced cutlet does not turn out to be too liquid, and add them to the chopped meat.

    We also grate hard cheese coarsely. Add it to the rest of the ingredients.

    Wash and dry the green onion feathers. Cut the onion into thin rings. Wash the parsley and finely chop it with a knife. Pour green onions and parsley into the cutlet mixture.

    Step 3: Beat the eggs and add salt and spices

    Now let's beat two eggs. They will help hold the minced meat together so that the products keep their shape well during frying and do not fall apart.

    Lastly, add salt, paprika and black pepper for spiciness. I don’t use other spices so as not to overpower the taste of the main ingredients.

    Mix everything, achieving a homogeneous consistency.

    Step 4: Fry the cutlets

    Pour oil into the pan and let it heat up well. Using a tablespoon, place the minced meat into a heated frying pan, forming round pieces.

    After frying them until golden brown on one side, carefully turn the cutlets over to the other side and bring to readiness over medium heat.

    Place the finished vegetable cutlets on a plate lined with paper towels to remove excess oil.

    Step 5: Submission

    It is better to serve the products hot. They are good both as an independent dish and with a side dish of potatoes, various types of cereals, rice or pasta.

A wonderful option for juicy, tender and satisfying chicken cutlets. It always turns out delicious with zucchini and cheese, although this recipe came as a surprise to me personally. However, for several years now, from time to time, I take young zucchini, buy a piece of cheese and chicken fillet to prepare a delicious dinner for the whole family. Of course, fried cutlets cannot be considered as an element of therapeutic nutrition, but if your family does not need a special gentle diet, why not pamper them with this magically tasty and also healthy dish? I mean the benefits primarily from the protein content, and here there is a lot of it: chicken + cheese. Well, dietary fiber (zucchini) as an integral element of the digestion process.

  • 1 kg minced chicken breast;
  • 1 medium onion;
  • 300 grams of zucchini pulp;
  • 2-3 cloves of garlic;
  • 100 grams of hard cheese;
  • 2 tablespoons of semolina;
  • 1 egg (+ 1 egg for frying);
  • a bunch of parsley;
  • salt pepper;
  • vegetable oil for frying.

How to cook chicken cutlets with cheese and zucchini

Everything is very simple. Peel the zucchini and onions and puree them in a blender, or grind them through a meat grinder. Add crushed garlic, finely grated cheese, and finely chopped parsley to the minced chicken. Drain the resulting juice from the onion and zucchini, combine with the minced meat, add the egg, salt, pepper and semolina, mix everything well. I got such a very soft minced meat - thin for cutlets, thick for pancakes :) But I decided not to add anything else, let it be tender.

Heat a frying pan with oil. In a cup, beat another egg with a fork and place it next to it. I made the cutlet first. With my hands, I just wet my hands in water. Well... no, it’s not comfortable, it’s still a bit runny. Then I started laying it out with a spoon dipped in the beaten egg - that was good, and the cutlets came out even (I used a spoon to bring them into a beautiful shape in the frying pan). Fry at medium temperature like regular cutlets.

Serve whatever you want as a side dish. Don't forget about fresh vegetable salads or simply cut fresh tomatoes and cucumbers into pieces to complement the meat dish with a side dish. Chicken cutlets with zucchini and cheese are quite dense, but tender and juicy.

Cutlets with zucchini and cheese are the ideal solution if you like to use chicken fillet for minced meat. Cutlets made from it often turn out not juicy enough, especially after they cool, but grated zucchini gives the cutlets incredible juiciness, as well as tenderness and softness.   • 1 chicken egg

  • 1/2 zucchini (120-150 g)
  • 1/2 tsp. salt
  • 1/5 tsp. spices for cutlets
  • 3 tbsp. l. frying oils

Preparation

1. Using a manual or electric meat grinder, grind the chicken fillet, cut into small pieces. You can also use other parts of the chicken, such as thighs or drumsticks (the bones from these need to be removed, of course). If desired, you can twist a piece of lard along with the meat.

2. Beat an egg into a bowl with minced meat, add salt and spices - ground coriander, black or allspice are ideal.

3. Grate the cheese on a coarse or fine grater. You can also take melted one, if you freeze it for about 15 minutes before rubbing it.

4. Grate half the zucchini on a coarse or fine grater. The resulting pulp can be slightly squeezed out of excess juice. Place it in a bowl with minced meat.

5. Now you need to mix everything thoroughly so that the minced meat is as homogeneous as possible. After this, you can start frying the cutlets. Heat oil for frying in a frying pan. Since the minced meat turns out to be quite “unruly”, it is better to spread it with a spoon. Try to give the cutlets a more neat oval or round shape. Fry over low heat for 3-4 minutes on each side.

Chicken cutlets with zucchini– it’s not only tasty, but also healthy. These cutlets will come to the rescue if you are tired of ordinary chicken cutlets and want some variety. Thanks to the pulp of the zucchini, they turn out very juicy and soft.

To prepare them, you can use ready-made minced chicken or chicken breast. To make homemade minced chicken, you can take not only chicken breast, but also meat from chicken legs.

Chicken cutlets with zucchini - recipe

Cooking cutlets from minced chicken with the addition of zucchini begins with soaking the loaf. It is advisable to use a slightly stale loaf for cutlets. Place slices of concrete or white bread in a bowl. Fill with milk or cold water. Leave for a few minutes to soak and become soft.

Wash the zucchini. Remove the skin from it. Grate on a medium grater.

Place minced chicken in a bowl.

Cut the onion into cubes.

Squeeze the loaf pieces from the water. Crumble into a bowl using your hands. Add grated zucchini and onion.

Using an immersion blender, puree the loaf, zucchini and onion until smooth.

Beat in the eggs. Stir.

Add minced chicken. Stir the cutlet mixture again.

All that remains is to add salt and spices to the minced chicken cutlets with zucchini.

Mix the minced meat. As you can see in the photo, the cutlet mass turned out to be thick and homogeneous due to the fact that we beat the zucchini with onions and loaves in a blender.

For frying chicken cutlets, give preference to refined sunflower oil. Wet your hands with water. Roll the minced meat into balls. Make round or oval cutlets at your discretion. Fry them on each side until golden brown.

  • Zucchini - 200 gr.,
  • Sour cream - 4 tbsp. spoons,
  • Onions - 1 pc.,

  • Dill - 3-4 sprigs,
  • Salt - to taste
  • Sunflower oil (refined)

Chopped chicken cutlets with zucchini - recipe

Wash the zucchini. Grate it on a coarse grater. Cut the onion into small cubes. Wash and finely chop the dill. Rinse and dry the chicken breast using napkins.

Cut it into small cubes. Place it in a deep bowl. Beat eggs into a bowl with chicken fillet, pour in sour cream. Add pepper, starch and salt. Add finely chopped dill and onion. Mix the mixture.

Squeeze out the juice from the grated zucchini. Place it in a bowl with the rest of the ingredients. Heat a frying pan with sunflower oil. Using a tablespoon, place the cutlets into the pan.

Fry the chopped zucchini on both sides until golden brown.

To make Chicken Cutlets with Zucchini and Peppers, prepare your vegetables. Peel the zucchini from the hard skin. If it contains hard seeds, remove them. It is ideal to take a young zucchini. Remove the stem, seeds and membranes from the sweet pepper, and wash the pepper thoroughly.
Take all ingredients in approximately equal quantities. Cut the chicken fillet, bell pepper and zucchini into small pieces. Grate the cheese on a coarse grater.

Mix chopped vegetables, fillet, cheese, flour, eggs into minced meat. Salt it and pepper it. Form small cutlets.

Fry the cutlets in vegetable oil for approximately 3-4 minutes on each side. Serve chicken cutlets with zucchini and bell peppers with any side dish.
