  • 3 chicken eggs;
  • 2 glasses of kefir or yogurt;
  • 50 gr. butter and sunflower oils;
  • 1 kilogram of regular wheat flour;
  • 1 packet of dry yeast;
  • pepper and salt to taste.

For filling have to take:

  • 8 boiled eggs;
  • 100 grams of green onions;
  • 50 grams of butter;
  • salt to taste.

Preparation:

  1. For the dough, all the eggs are broken into a deep container and beaten with a mixer, a whisk, or just two forks with salt until a thick foam appears.
  2. Carefully add 50 grams of butter, 50 grams of vegetable oil, kefir or yogurt to the resulting mixture.
  3. Flour is mixed with pepper and dry yeast. The resulting mixture is added to the egg mass and mixed thoroughly.
  4. The dough is allowed to rise twice, with the obligatory increase in volume by approximately two times. The finished mass should lag well behind your hands. If it remains liquid, add a little more flour.
  5. For the filling, all the products listed in the recipe are finely chopped and mixed into a homogeneous mass.
  6. The dough is divided into individual pieces, approximately the size of a fist. The pie blank is rolled out to a thickness of 5-6 millimeters.
  7. Place the filling on it and carefully pinch the edges. After a short proofing, the surface of the pie is greased with vegetable oil or egg.
  8. Bake in a hot oven for 25-30 minutes, gradually reducing the heat.

How to cook pies with onion, egg and rice

Many people with a sweet tooth like original pies with the addition of eggs, onions and rice. Such products turn out to be slightly sweet and very filling. You can make this delicious addition to your lunch using any type of dough. Experienced housewives use:

  • yeast;
  • puff pastry;
  • fresh.

  • 0.5 cups sour cream;
  • 0.5 teaspoon salt;
  • pepper to taste;
  • 1.5 cups of wheat flour (the exact amount is determined independently until the consistency of thick pancake dough is obtained);
  • 1 packet of baking powder or half a teaspoon of baking soda.

For filling required:

  • 4-5 hard boiled eggs;
  • 100 grams of green onions.

Preparation:

  1. For the dough, beat the eggs thoroughly with salt and, if using, pepper. Gradually add sour cream, continuing to beat, pour in kefir. The last step is to mix the flour with baking powder.
  2. Chop the boiled eggs and green onions, mix and add to the prepared dough. Next, lazy pies with eggs and herbs are prepared like regular pancakes.
  3. Vegetable oil is most often used for frying. You can fry in a mixture of butter and vegetable oils. Future lazy pies are fried on each side until golden brown, about 5 minutes. Large lazy pies can be placed in a hot oven to finish cooking.

Dough for pies with onions and eggs - yeast, puff pastry, kefir

The advantage of the universal filling of eggs and green onions is the ability to use a variety of doughs. You can try making pies using such common options as yeast dough, puff pastry, and kefir dough.

For the simplest yeast dough required:

  • 300 milliliters of milk;
  • 1 packet of any dry yeast;
  • 1 tsp granulated sugar;
  • 0.5 teaspoon salt;
  • 3 cups wheat flour;
  • 1-2 chicken eggs;
  • 50 milliliters of vegetable oil.

Preparation:

  1. Heat the milk to about 40 degrees Celsius. Add sugar, salt and 2-3 tablespoons of flour to it. Add yeast and let rise. After 20-30 minutes, the dough will approximately double in volume.
  2. Pour all the remaining flour into the risen dough, add eggs, vegetable oil, mix thoroughly and leave to rise again for about 40 minutes. Cover the container with the dough with a towel or cling film.
  3. When choosing to make puff pastry pies, the easiest way is to use semi-finished products that have already been prepared industrially.
  4. A quick option is to prepare kefir dough. You need to take equal parts of kefir and sour cream, about 0.5 cups each. Some housewives replace sour cream with mayonnaise.
  5. In the resulting mixture you need to add 0.5 teaspoon of baking soda or add 1 packet of baking powder. Beat 3-4 chicken eggs and add flour until you get a dough, like for pancakes. You will need from 1 to 1.5 cups of flour.

To prepare delicious egg and onion pies, you need to take into account several essential points:

  1. You need to roll out yeast or puff pastry very thinly so that the filling takes up most of the finished product.
  2. The pies can be either fried or baked. They turn out equally delicious.

Usually, I make the dough myself, but today I was so lazy, and in the store I discovered the presence of good purchased dough, there were also green onions on sale, and there were eggs left in the refrigerator at home - that decided everything - today there will be fried pies with green onions and an egg.

Since our dough is already ready, I simply take it out of the bag onto a table sprinkled with flour to “breathe and spread its wings.”

- I set the eggs to boil for 15 minutes, and then under running cold water, break the shells and leave to stand for 5 minutes in cold water - this cleans the shell better

I put the frying pan on the stove, add vegetable oil and heat it (until the first splashes of oil - it starts to crackle in the frying pan, which means it’s time to fry)

As soon as the oil is hot, place the pies. Place seam side down. Don't be afraid if holes suddenly appear in the dough - the filling will not escape (tested). Fry on each side until the dough is cooked and golden brown.

Place the finished pies on paper napkins to allow excess oil to be absorbed. Since the pies were made without flour, the oil does not darken during frying and no sediment appears, and all the pies remain golden and ruddy until the last batch of frying.

How to prepare kefir dough for pies in the oven

  1. Combine the yeast with sugar and pour in warm (not hot!) milk. Stir vigorously.
  2. Cover the container with a towel and leave the mixture for about 10-15 minutes - wait for the dough to rise with fluffy foam.
  3. Mix kefir with refined oil, warm it slightly and pour it into the activated yeast solution. Add the egg and salt, stir thoroughly. Gradually add flour to the liquid mixture. When the sticky and already thickened mass becomes difficult to stir with a spoon, put the contents of the bowl on the table.
  4. We start kneading by hand - we achieve a very soft, plastic and pleasant-to-touch consistency. More flour may be needed (depending on its moisture-absorbing ability), but there is no need to overwork the dough. As soon as the flour mixture stops sticking to your palms, roll it into a ball, place it in a spacious, clean bowl and put it away in a warm place for the next 30-40 minutes.

  5. While the dough is waiting for its turn, we make the filling. Chop a bunch of onions with a knife and heat in a frying pan with melted butter for 7-8 minutes.

Flour and liquids are given approximately the way I do everything on an intuitive level. As my grandmother says, “I cook by eye,” you need to feel the dough, whether it needs liquid or whether you need to add a little flour. So, my dear chefs, let’s cook, and, as they say, we’ll get our hands on it.

INGREDIENTS FOR FILLING:

  • 2 bunches of green onion feathers.
  • 6-7 boiled chicken eggs.
  • 3 spoons of sour cream.
  • Salt and pepper to taste.

COOKING PROCESS:

☑ It usually takes me 5 cups of flour to bring the dough to this state. I add a little more flour while kneading with my hands.

☑ The amount of flour depends on its type. Some varieties have more gluten, some have less, and the amount of flour added depends on this.

☑ We start the whole process with a spoon. And when it is no longer possible to knead the dough with a spoon, we begin to knead with our hands.

☑ Lubricate your hands with vegetable oil during the process.

☑ When the dough reaches the desired consistency, roll it into a ball and leave it under a towel for half an hour so that the dough can sit properly.

☑ While the dough is gaining strength, you can prepare the filling for our future pies with onions and eggs.

☑ At home, you can cram in as much filling as possible. But remember that if there is a lot of filling, you simply will not be able to close the pie. So add the filling in moderation. So that your pie can close without much effort and will not burst from tension.

☑ And so the filling is inside, now we put the pie on the palm of our hands and press it down a little on top so that the filling is distributed throughout the entire pie.

☑ We make several preparations and only after that put the frying pan on the fire and pour in vegetable oil. The butter should cover the pie by half.
