Recipe 1. Milk flatbreads in a frying pan with cheese

Ingredients:

220 ml milk;

350-400 g flour;

90 g cheese;

2 cloves of garlic;

Butter;

Half a tsp. salt and soda.

1. Sift the flour into a deep bowl and mix with soda and salt.

2. Make a well in the center of the flour mound and pour in the milk. Knead into an elastic dough with your hands, adding a little more flour if necessary.

3. Wrap the finished dough in a plastic bag and put it in the refrigerator for 30 minutes.

4. Grate the cheese on a fine grater and transfer to a plate. Add the pressed garlic. Mix thoroughly.

5. Roll out the rested dough into a sausage with a diameter of about 3-4 cm, cut the sausage into circles about 0.8 cm thick.

6. Roll out each circle into a flat cake, and place a teaspoon of cheese filling in the middle.

7. When gathering the edges, pinch them at the top into a knot and press the resulting bag with your hands, giving it the shape of a flat cake.

8. Fry the tortillas in a dry frying pan on low heat for 2-3 minutes on each side.

9. Before serving, brush the flatbreads with butter while still hot.

Recipe 2. Milk flatbreads in a frying pan with mushrooms and cheese

Ingredients:

About 300 g of flour;

3/4 cup milk;

120 g cheese;

150 g champignons;

Bulb;

Butter and vegetable oil;

A small spoon of soda and salt.

How to cook flatbreads with milk:

1. Mix milk, soda and salt in a deep bowl.

2. Add sifted flour in small portions, kneading the dough with your hands. It should not stick to your hands, the consistency is elastic, the dough is not soft and not too hard.

3. Place the finished dough in the refrigerator for 30-40 minutes, after wrapping it in a bag.

4. While the dough sits, rinse and cut the champignons into strips and chop the onion into small cubes. Fry both ingredients in a small piece of butter until lightly golden and the liquid has completely evaporated.

5. Grate the cheese or cut it into small cubes.

6. Divide the present dough into circles of the same size, roll out flat cakes no more than 3-4 mm thick.

7. Place a small amount of cooled mushrooms and onions on one side of the flatbread, sprinkle the prepared cheese on top.

8. Cover the filling with the other side of the cake and carefully roll out the dough with a rolling pin, but so that no holes are formed.

9. Grease a frying pan with vegetable oil and heat it up.

10. Fry the tortillas on both sides until golden brown.

Recipe 3. Simple milk cakes in a frying pan for tea

Ingredients:

245 ml milk;

420-460 g flour;

Salt, soda - a pinch;

Vegetable oil;

45 g sugar;

Vanilla sugar.

How to cook flatbreads with milk:

1. Mix sugar with vanilla sugar, soda and egg in a deep bowl.

2. Add an egg and a spoonful of vegetable oil, beat until smooth.

3. Without ceasing to whisk, pour in the milk in a thin stream.

4. Now pour in small portions of pre-sifted flour, knead an elastic dough that does not stick to your hands.

5. Place the dough in a bag and let it rest for about an hour in the refrigerator.

6. After an hour, divide the dough into circles, roll them in flour and shape into flat cakes. Roll out and use a fork to make small indentations around the entire perimeter.

7. Fry the dough in a heated greased frying pan on each side for 2-3 minutes.

Recipe 4. Yeast cakes with milk

Ingredients:

550 ml milk;

1 tbsp. l. dry yeast;

Two eggs;

50-80 g sugar (to taste);

About a kilogram of flour;

How to cook flatbreads with milk:

1. Pour the yeast into a bowl, pour in a small amount of milk, add two tablespoons of sugar and flour, mix well. Place in a warm place for 10-15 minutes.

2. Beat the prepared dough with the remaining sugar, eggs and salt.

3. Mix the resulting mixture with milk, then add flour and knead the dough with your hands.

4. Place the finished dough into a clean, dry bowl, cover with a towel, and place in a warm place for about 30-45 minutes until the dough has doubled in size.

5. Pour flour onto the table and take out the prepared dough.

6. Form several sausages from the dough, which you will need to divide with your hands into small circles, from which flat cakes will be rolled out.

7. The cakes can be either rolled out or shaped by hand. It is better that they are not very large; 7-10 cm in diameter will be enough.

8. Grease the flatbreads with vegetable oil, fry in a well-heated frying pan, first on one side for about 5 minutes, then on the other.

Recipe 5. Milk flatbreads in a frying pan with potatoes

Ingredients:

250 ml milk;

380 g flour;

1/3 tsp. soda;

Three medium sized potatoes;

140 g Adyghe cheese;

35 g plum butter;

Salt, pepper, seasonings.

How to cook flatbreads with milk:

1. Pour flour into a bowl, pour in milk, add baking soda and salt. Knead the elastic dough, put it, wrapped in film, in the refrigerator.

2. Peel the potatoes, cut into large slices and boil until tender in salted water.

3. Drain the water, add oil, seasonings, a little salt and pepper to the potatoes. Prepare the puree.

4. Place the cheese in any container and mash with a fork, transfer to mashed potatoes. Stir.

5. After 20-30 minutes, remove the dough from the refrigerator, divide into equal pieces of the desired size, and roll out the cakes.

6. Place the potato filling in the center of each flatbread, pinch the dough in any convenient way, but so that the filling certainly does not leak out during frying.

7. Roll out the filled dough with a rolling pin.

8. Fry the finished products on each side for 4-5 minutes in a frying pan in heated vegetable oil.

Recipe 6. Milk flatbreads in a frying pan with green onions and cheese

Ingredients:

100 ml milk;

150 g flour;

Two eggs;

Green onion feathers;

A pinch of salt and baking powder.

How to cook flatbreads with milk:

1. Boil one hard-boiled egg, cool, peel and cut into small cubes.

2. Rinse 8-10 young onions and cut into thin rings, mix with egg.

3. In another dry bowl, whisk the milk with the second raw egg, salt, baking powder and flour.

4. Place the prepared filling into the dough and mix.

5. Fry the flatbreads on both sides until golden, spooning the dough onto well-heated oil in a frying pan.

Recipe 7. Flatbread with sour milk in a frying pan

Ingredients:

250 g flour;

200 ml sour milk;

A pinch of baking powder, salt;

50 g margarine;

A handful of sesame seeds.

How to cook flatbreads with milk:

1. Mix flour with baking powder and salt in a large container.

2. Add butter warmed at room temperature, knead the dough until it forms large crumbs.

3. Pour in sour milk and knead the dough.

4. Roll out the dough into a large thin layer and cut it using a plate or pan into flatbreads.

5. Sprinkle the finished products with sesame seeds, lightly press them with your hands so that they do not crumble during frying.

6. Fry the flatbreads on both sides over low heat until lightly browned.

7. Serve hot.

If you are preparing sweet flatbreads, add sugar, honey to the dough, and if instead of bread, add salt and spices.

Vanillin can also be added to the dough of sweet flatbreads, which will give the finished products a special aroma.

Since the recipes do not use fermented milk products, which give the flatbreads softness, use soda. It will make the milk cakes fluffy.

Also, to make the dough airy and fluffy, it is recommended to sift the flour several times to saturate it with oxygen.

Do not rush to start modeling after kneading; let the dough “rest” for some time in the refrigerator.

Knead the dough with your hands. This way it will definitely turn out homogeneous without a single lump of flour.

The dough should be kneaded carefully, its consistency should be medium: not very thick, but not very soft. Otherwise, the cakes will either turn out too dense and hard, or, conversely, they will not be able to hold their shape and will spread.

You can roll out cakes of absolutely any diameter, depending on your wishes or the diameter of the frying pan, but the thickness of the cakes should not be very large. The thinner the cake, the faster and more completely it will cook.

If you fry the tortillas not in a dry frying pan, but in oil, then before serving, it is best to first place them on a paper towel to drain off excess oil.
