Beautiful and tasty chicken salad. It’s a completely ordinary set of ingredients, but it also has its own twist - kiwi. Well suited for both a family dinner and a holiday table.

  • 1 chicken breast (weighing approximately 500 grams),
  • 2-3 cucumbers (about 300 grams),
  • 15 olives,
  • 50 grams of walnuts,
  • 150 grams of cheese,
  • mayonnaise,
  • 2 kiwis.

Boil the chicken breast in salted water until cooked. Then remove from the broth, cool, remove the bones and cut into cubes.

Wash the cucumbers, peel them and cut them into cubes.

We cut the olives into thin rings. Grate the cheese on a coarse grater.

Wash the walnuts, dry them with napkins, set aside a few large pieces, and chop the rest. You can grind the nuts with a knife (chop), you can use a blender, or you can roll them with a rolling pin after putting them in a tight bag.

We clean the kiwi and cut it into rings.

Let's start assembling the salad. Place a glass in the center of the plate or dish. Place layers around it.

Place the chicken in the first layer and coat it with mayonnaise. Place cucumbers in the second layer and brush with mayonnaise. Then we lay out the olives and put the cheese on them.   • 0.5 small onion;
  • 1 tsp Sahara;
  • 1 tsp salt;
  • 1 tsp vinegar;
  • 0.5 tbsp. boiling water;
  • 1 hard-boiled egg;
  • mayonnaise;
  • 1 small tomato;
  • 50 grams of hard cheese;
  • 100 grams of boiled chicken fillet;
  • 0.5 kiwi.

First, pickle the onion. To do this, dissolve salt and sugar in boiling water and add vinegar. And put the onion cut into half rings into this marinade. Leave it like this until it cools, for 20-30 minutes.

The layers in the salad will be as follows - chicken fillet, pickled onions, cheese, tomato, egg, kiwi. I will be preparing the salad in portions, so I use a mold to give the salad a more appetizing look. At the end, before placing the last layer, I will turn the mold over onto a plate, so I will place the layers in the mold in the reverse order: egg, tomato, cheese, onion, chicken fillet. The kiwi salad is decorated at the very end. Cover the mold with cling film and grease the bottom with mayonnaise.

Place a layer of boiled egg cut into small cubes. Lubricate it with a small amount of mayonnaise.

In a blender, mix the herbs with garlic, mustard, vinegar and a little liquid from the olives, gradually add vegetable oil until you get a sauce that is thick enough to resemble sour cream.

When the potatoes are cooked, drain the water, dry the potatoes, cool slightly, place in a serving dish, season with the resulting sauce, sprinkle with the white part of the green onions, and stir.

  • 1 large tomato (or 2 medium sized)
  • 2 kiwi
  • Mayonnaise (I have 67%, literally 3-4 spoons)

How to prepare Emerald scattering salad

For this salad I use chicken breast. I boiled it in salted water until tender. You can boil thighs or legs. It will also be delicious with smoked chicken (use breast or leg).

Sometimes, for salads, I bake it. The meat turns out more tender, juicier and tastier. But today I decided to boil the meat. Boiled meat should be cooled and cut into cubes.

I took a plate, coated the bottom with mayonnaise and laid out the diced chicken breast. I grease it with mayonnaise. You can apply a “mesh of mayonnaise”.

If you do not want to use mayonnaise, then prepare a sauce from sour cream or yogurt with the addition of mustard and spices (if desired, you can add lemon juice and a little garlic to the sauce).

I bought tomatoes at the market. It is clear that it is no longer the season for fresh tomatoes; they sell greenhouse ones. If you can’t buy a tomato, or you don’t want to add fresh tomato to the Emerald Scattering salad, I suggest replacing it with pickled onions.

Pickle the onions in advance, I recently shared. You can pickle red onions to add color to the dish.

I like this recipe with fresh tomatoes, in my opinion it tastes better. I cut the tomatoes into cubes. If the tomato is juicy, I recommend placing it in a sieve to remove excess juice.

I put a layer of tomato on the chicken breast and spread it with mayonnaise. But this layer does not need to be coated so that the dish is not greasy.

I also recommend adding a little salt to the tomatoes.

I boil the eggs for 10 minutes (from the moment they boil), drain the water, cool, peel and grate. I spread it with a third layer.

The salad looks like a slide. Grease the eggs with mayonnaise. Give the salad the appearance of a slide, it turns out more beautiful.

I grate hard cheese. I will sprinkle cheese on top of the salad. Using Russian hard cheese. Can be replaced with processed cheese. I do not grease the last layer with mayonnaise.

I distribute the hard cheese over the entire surface of the salad. That's it, this is the last final layer. If you think necessary, add more hard cheese.

I will decorate with kiwi. I bought 4 kiwis, but only used 2 pieces. I cut one kiwi into cubes, and the second into slices. I clean the kiwi first.

I place kiwi on top. Do it according to your taste and desire. Children love decorating salads; they do it with pleasure, so you can involve them in this simple task.
