  • 1 tbsp. granulated sugar;
  • 1.5 tbsp. shortbread cookies, ground into crumbs;
  • 100 g peeled and chopped walnuts;
  • 1 full cup coconut flakes.

Preparation:

  1. Place carrots and sugar in a dry frying pan. Simmer the mixture over medium heat until the juice has completely evaporated and the vegetable has softened. Transfer carrot shavings to a plate to cool.

  • 1.5 tbsp. first-grade flour;
  • 1 egg;
  • 260 g granulated sugar;
  • 1 standard sachet of baking powder (10 g);
  • ½ packet of vanillin;
  • ½ tbsp. coconut flakes;
  • vegetable oil;
  • 1 tbsp. medium fat cream.

Preparation:

  1. Beat the egg into a deep bowl. Add granulated sugar (130 g).
  2. Add not cold kefir, all the flour sifted with baking powder.
  3. Stir the ingredients until a homogeneous dough is obtained (the consistency is the same as for pancakes). You can use a mixer on low speed.
  4. Mix coconut with remaining sugar and vanilla.
  5. Grease the silicone mold with a minimal amount of oil.
  6. Place the dough into it.
  7. Spread the coconut mixture over all surfaces of the future pie.
  8. Bake the treat for 12 - 14 minutes at 170 - 180 degrees.
  9. Then cover the coconut pie with foil and return to the oven for another 10 minutes.

Pour warm cream over the hot dessert. Allow to cool directly in the mold.

Meringue with coconut

Ingredients:

  • 2 egg whites;
  • 100 g granulated sugar;
  • 1 pinch of table salt;
  • 1 tsp. lime/lemon juice;
  • 40 g coconut flakes.

Preparation:

  1. Pour the whites into a bowl. Add salt.
  2. Beat until fluffy, starting at low speed and gradually increasing it.
  3. Add lemon juice. Begin gradually adding sugar without stopping whisking.
  4. The sweet crystals should completely dissolve, and the mass should become fluffy and dense (do not drain from the whisk).

This is a great way to feed your little gourmet his unloved cottage cheese.

Mix 100 grams of cottage cheese, 100 grams of raisins, 50-70 grams of sugar and the same amount of flour. Form balls from the resulting dense mass and boil for 5-10 minutes. in boiling water. They should float up. Or you can steam them, which will take 10-15 minutes. While still warm, roll in coconut flakes. These products make an excellent portion for an afternoon snack. You will need 30 grams of butter, 1/2 cup of sugar, 50 grams of oatmeal, 2 egg whites, 50 grams of coconut flakes and 15 grams of vanilla sugar.

Melt the butter in a frying pan and fry the oat flakes in it until they are browned. The best ones are those that are quick-cooking. They start preparing it with the same cream. For it you need to take 200 grams of coconut flakes, 15 grams of vanilla sugar, half a liter of milk, 1 pack (180-200 grams) of butter (get it in advance so that it warms up), 3/4 cup of sugar, 2 yolks (whites can be used for another recipe), 2 tablespoons of flour and the same amount of starch. Instead of the latter, you can use vanilla pudding, but then you don't need vanilla sugar. The “dough” in this cake will be a sweet cracker. You will need about 300 grams of it.

Beat the yolks with half a glass of sugar, then add flour, starch and 100 ml of milk. Beat everything again with a mixer into a fluffy mass. Separately, on the stove, bring 400 ml of milk with the remaining sugar to a boil. This should be done on low heat. Then add the whipped yolk mixture and, stirring constantly, cook until the cream thickens. You should end up with a paste similar to ready-made pudding. Cool completely to room temperature. Using a mixer, beat the softened butter, gradually adding the custard. Add coconut flakes (reserve a little to decorate the top of the cake) and stir.

Cover the pan with cling film to make it easier to remove the cake from it later. If the cracker is round, it is more convenient to take the same shape, and if it is square, then a square one. Place crackers in one layer, close to each other. Place a third of the cream on top. Then there is another layer of cracker, cream, cracker and cream. There are 3 layers in total. The remaining coconut is used to decorate the top. Place the cake in the refrigerator for 2-3 hours. He needs to soak in. Before serving, carefully remove from the mold and remove the film. The cake is ready!

How to make it yourself

It’s quite possible to make shredded coconut at home.

Steps for making coconut flakes at home:

  • Choosing a good coconut - high quality and ripe.
  • Removing coconut juice.
  • Cleaning the outer cover and extracting the pulp.
  • Grinding the pulp.
  • Drying or using.

You can buy nuts at any time of the year, but the best fruits appear on sale from October to December. Choose a firm fruit that is free of cracks, drips, and mold. Also carefully inspect the “eyes” (closed holes on the fruit), making sure they are not wet. Be sure to shake the nut - in a fresh coconut the juice will gurgle and shimmer.


The next step is to drain the coconut juice. The juice can be drunk or drained by making a hole in one of the “eyes” of the nut and inserting a straw there. To remove the outer shell of the fruit, tap the coconut with a hammer and discard any loose sections of the shell. You can also cut the nut using a metal saw, after which it will be very easy to extract the pulp from the resulting halves.


Having cracked the nut and obtained its snow-white pulp, take a regular vegetable grater and any container.

Rub the pieces of pulp smoothly, slowly and carefully, then the structure of the future chips will be homogeneous. You can also use a food processor if it has a suitable attachment.


The finished shavings can be used immediately or dried a little. You can also mix the resulting shavings with vanilla sugar.

The main industry for using coconut flakes is confectionery:

  • Coconut pulp shavings are added inside rolls, pastries, and cakes as a delicious aromatic filling.

Apple pie

You need:

  • kilogram of apples;
  • one glass each of flour, coconut and sugar;
  • 200 grams of butter;
  • 4 eggs;
  • tea spoon of soda;
  • 3 tsp. spoons of lemon juice;
  • 50 grams of powdered sugar.

After grinding the butter, eggs, sugar and lemon juice, add flour, 3/4 cup of chips and soda. Grate 100 grams of apples, add to the dough, then knead it well and place in the mold. Place chopped apples on top of the dough. Place in the oven for 45 minutes, and a few minutes before the end of baking, sprinkle the pie with 1/4 of the chips that you have left, as well as powdered sugar.


Butter cookies

Beat two eggs and 100 grams of sugar, add 200 grams of coconut and mix. Pour 100 grams of wheat flour, a little baking powder into the mixture and after kneading, put it in the refrigerator for half an hour. With your hands wet, form the cookies and bake for about 15 minutes.


Melt 200 grams of white chocolate and 200 grams of butter with constant stirring over low heat. Add 400 grams of condensed milk to the melted ingredients, stir and add 70 grams of coconut flakes. The resulting cream should be kept in the refrigerator for several hours in a glass container. This cream can be used to coat cakes, pastries, and even just slices of bread.


Meringue cookies

You need:

  • 100 grams of white coconut flakes;
  • 100 grams of sugar;
  • 1 protein.

Mix sugar and coconut in a bowl. Add the egg whites and after mixing, place the future cookies with a spoon onto a baking sheet lined with baking paper. Bake for about 7 minutes.


Coconut chocolate balls

To prepare you need:

  • 200 g coconut flakes;
  • 70 g powdered sugar;
  • 100 ml cream;
  • 70 g butter;
  • milk chocolate (about 200 g).

Mix coconut and powder in a bowl, pour this mixture into a saucepan with heated butter and cream. After making small balls from the resulting mass, keep them in the refrigerator for one hour. After melting the chocolate, dip the coconut balls into it (use toothpicks), then place the candies in the refrigerator overnight.

Keep coconut shavings in a cool place where it is dry and free of foreign odors. Packaging purchased unopened can be stored for up to 12 months. It is recommended to use the shavings made by yourself immediately, or, after drying them a little, store them in the refrigerator.
